Most pizza dough is in a hurry.
Grocery store dough is built for speed. Rushed proofs, dough conditioners, and a shelf life that has to survive a supply chain. It is why it tears when you stretch it, tastes like flat bread, and bakes up pale in the middle. It is not that you are bad at making pizza. You were handed bad dough.
Real dough takes time. Time is the one thing a factory will not give it, and the one thing we refuse to skip.
WHAT WE DO DIFFERENT
We make our dough the way serious pizza makers do: with a few simple, honest ingredients, premium flour, water, yeast, salt, and a touch of olive oil. No shortcuts. No additives. Just like you’d do it in your own kitchen, but crafted with the care and consistency that comes from decades of passion for great pizza.
BUILT BY REAL PIZZAIOLOS
Our dough was developed by people who have spent their lives making pizza. Years on the line at some of Southern California's best pizzerias, and just as many years chasing the perfect pie with a scale and a notebook.
We already did the hard part. The testing, the tweaking, the hundreds of batches that were not quite right. All of it is finished, folded into every ball, and waiting in your freezer.
That leaves you the good part. Stretching it, topping it however you want, and pulling something out of the oven you are proud of.
HOW TO THAW & PROOF YOUR DOUGH
STEP ONE
Remove from freezer and let thaw in packaging.
STEP TWO
Remove from packaging and place in pans or dough bins. A little light oil topping can also be helpful.
STEP THREE
Leave at room temperature for 5–8 hours until fully thawed and proofed.
STEP FOUR
Stretch and bake when soft and airy.
